March 19, 2026 – A European Commission (EC) report estimates that approximately 70% of European society is expected to be at risk of micronutrient deficiency or “hidden hunger.” Fundamental biochemical processes rely on the presence of many vitamins and minerals; hence, a deficiency thereof can predispose those at risk to many diseases, including cancers, infections, mental health, metabolic, cardiovascular, and autoimmune conditions. The term hidden hunger is used by the United Nations and the EC because these vital compounds and trace elements are, for the most part, imperceptible in the food we eat, and the absence of them is detrimental to human physiological functioning in a far less obvious way than macronutrient deficiency. This makes it a low priority for a food industry geared toward yielding high quantity, rather than high-quality produce.
