January 12, 2026 – Innova Market Insights unveils its Global Flavor Trends for 2026, a comprehensive analysis of the five consumer and market-driven flavor trends poised to reshape the global flavor landscape for 2026 and beyond.

To gain insight into these major trends, Innova will be hosting its annual Global Flavor Trends webinar on January 29 from 4 PM CEST / 9 AM CT. Lu Ann Williams, Innova’s Global SVP of Research, will introduce each trend and highlight standout launches across key food and beverage categories.

Trend 1: Sensorial Explorations

Textures, aromas, and visual appeal are growing drivers of indulgence and perceived value. For instance, 26% of Gen Z favor visually striking and surprising flavor combinations. Toppings, seasonings, and sauces remain key avenues for experimentation, with a majority of consumers interested in trying new foods.

Trend 2: Cultural Remix

Globalization, travel, and social media continue to fuel cross-cultural flavor exploration. Three in five consumers say they are open to trying traditional flavors with a modern twist, and hybrid blends of local and global inspirations are increasingly embraced across categories.

Trend 3: Easy Health, Full of Flavor

More than 60% of Gen Z and Millennials are incorporating protein into their diets. Still, consumers seek a balance between health and indulgence, and taste remains the ultimate deciding factor. Reducing undesired ingredients is also a top priority for consumers around the world.

Trend 4: Flavor Fest

Occasion-based innovation tied to holidays or milestones turns taste into celebratory moments. Additionally, consumers seek nostalgic and cozy flavors that evoke a sense of tradition and seasonal excitement. Half of consumers also turn to mealtime occasions for flavor experimentation, underscoring meals as personal, expressive experiences.

Trend 5: My Mood, My Flavor

Consumers increasingly align flavors with mood and emotional needs, embracing taste for self-care, mental well-being, and daily rhythms. In fact, 74% of global consumers look to food and beverages to improve their mood when coping with stress. Time of day and emotional state also strongly influence flavor preferences.
