This report discusses topics related to Innova’s #8 trend for 2024 – “Ocean’s Of Possibilities.” It uses analysis of consumer research and launch trends to look at how marine ingredients are placed to play a pivotal role in the future of food and beverage NPD. Three key opportunities are highlighted: health, e.g., fortification with collagen proteins, microalgal omega-3s and vitamins and minerals; sustainability, with marine ingredients providing a readily renewable plant source and helping with carbon capture; and natural functionalities, such as color from spirulina. Alongside an evaluation of these credentials, two categories that are benefiting from using marine ingredients to add value by innovators (with a focus on health and environmental attributes) are reviewed, namely fish substitutes and snacks.
