September 15, 2025- This report discusses trends in fermented food and beverage in Asia, assessing trends in NPD and the different ways in which these products are positioned. It looks at key products in the fermented beans, sauces, vegetables, beverages and jelly categories. Fermented products are traditional to Asia and are well established in many areas, but positioning continues to evolve in the fields of flavor, health and/or texture, while usage can range from their role as kitchen staples through to their presence as added value ingredients in processed food.
