November 28, 2023 – This report looks at trends in texture and flavor combinations, with particular reference to key areas or influences that are shaping these trends. These include: the continual rising appetite for global foods and their associated textures and flavors; indulgence and treating; growth in plant-based food and beverages and how these measure up in terms of mimicking their animal protein equivalents in terms of taste and texture; and, how innovators are putting texture into beverages.
