November 6, 2026- Each month, Innova Market Insights looks at the previous month’s food and beverage launches and what they reveal about where the global market is heading. This month’s analysis examines launches through Innova’s newly released Top 10 Trends of 2027 and how brands can apply them to new product development. It also explores how snack brands in Spain are moving beyond the mainstream, what European consumers value as they seek healthier lifestyles, and the latest launch highlights. Innova’s Innova Insights: October 2026 Edition report covers all 10 trends, while this article explores the first five.

How is the Top Trend, Nutrient Density Design Impacting Innovation?

Global consumers want their food to do more for them, from what is added or reduced to how it is communicated. A majority say they read all or most of the nutrient information on pack, checking sugar, protein, and fat most. They also look for positive health indicators. In South Korea, the collaboration between Re:Harvest and CheilJedang fits this profile, by introducing their Balance Meal X Ugly Bagel Club High Protein Low Carb Sesame Multigrain Bagel that is low in sugar and high in protein and fiber.

How is Precision Protein Driving Global Food and Beverage Trends?

As the protein trend grows, so does consumers understanding of its benefits. Quality, source, format, and personalization now set products apart. FITTR entered the nutrition food space with their No BS Instant Protein Oatmeal, designed to support metabolic health, curb hunger, and stabilize blood sugar, particularly for consumers in India. Its yeast protein, a complete protein alternative, suits the country’s large vegetarian, vegan, and often lactose-intolerant population.

Why Is Sensory Playground a Key Trend Across F&B?

Sensory exploration is becoming more layered and specific, with distinctive flavors, surprising textures, new formats, and culturally familiar comfort driving food and beverage decisions. Lindt and Sprungli’s exclusive chocolate bar, blends Japanese ceremonial-grade matcha and sakura cherry blossom flavors with creamy white chocolate and crispy roasted genmai (brown rice). Available for a single day during peak cherry blossom bloom, it offers consumers an ultra-limited edition sensory experience.

Why Are Consumers Increasingly Seeking a Metabolic Edge?

Enjoyment matters, but global consumers are increasingly paying attention to how specific ingredients affect their bodies. 39% are eating less sugar and want food to maintain steady energy, looking for specific references on food and beverage packaging that meet their expectations. In Hong Kong, Felicity and Health (FNH) Keto Diet recently released reengineered steam buns to help overweight adults. The product replaces most of the traditional wheat flour with flour rich in beta-glucan, a soluble fiber, to help manage blood sugar and produce a low GI response.

How is Longevity Engineering Reframing Food?

Food is being reframed, with longevity products changing formulas to meet the needs of consumers looking to extend their strength, mobility, memory, and independence far into the future. Staying strong as they age is a top priority, with 35% of global consumers wanting help in their daily life. In Indonesia, Mayora’s Collagena Sterilized milk with Collagen enriches reconstituted milk with vitamin A and bovine collagen to support bone and joint health, alongside skin elasticity and muscle mass.

Can Snacks in Spain Move Beyond the Mainstream?

Snack innovation is Spain is far more concentrated than it is in other markets globally. According to Innova’s research, nuts, potato chips, and corn chips make up three-quarters of launches. Nuts lead innovation thanks to their inherently healthier profile, while potato chips remain a traditional pick for pure snacking occasions. Tosfrit Totas Gourmet’s new Artisan-style Potato Chips with a Homemade Recipe Flavor highlight how snack brands are leaning further into health, with just three simple ingredients.

Health aside, flavor is the most important purchase influencer for 54% of salty snack consumers, and many consider snacks a low-risk way to try new flavors. Fritos Peres Papeo Fiesta’s Potato Chips with Hot Lollipop flavor reflect this trend, blending profiles from different categories. Young snackers also value convenience for their busy routines, and top brands are responding with smaller formats such as single-serve packs and minis, including the new Pringles Minis from Mars.

Popcorn, a familiar but only occasional treat, shows how challenging it can be for snacks in Spain to move out of the mainstream. Gen Z, however, is looking past the usual selections for new flavors, snacking more, and spreading snacks across occasions, which opens opportunities for brands. Collaborations are one strategy brands are using to boost sales in Spain, as PepsiCo’s Doritos X Stranger Things Bits Hellfire Club Sweet & Spicy crossover shows.

Looking ahead, growth will rely on serving the different needs of younger and older consumers. Gen Z responds to bolder flavors, cultural moments, texture, and on-the-go formats, while older consumers value quality and familiarity. Brands that balance both sets of expectations are best placed to succeed.

European Consumers Look to a Healthier Eating Lifestyle

Most European consumers think that healthy eating is important, and 3 in 5 prefer improving their health through diet and lifestyle over medication. Many also don’t follow a specific diet plan, opening the door for food and beverage manufacturers to offer support.

Porridge has a long history as a healthy, whole food. Mufeed’s new Talbina Traditional Porridge line, made from hulled barley, provides sustained energy to help prevent slumps and reduce tiredness. Mental well-being is another concern. Europeans are less likely to change their diets to address mental health concerns, but when they do, 45% see food and drink as a way to support their energy levels. Spacegoods’ Oat Mushroom Latte addresses these challenges, promising focus, productivity, and energy, drawing on lion’s mane mushrooms and ashwagandha for emotional balance.

Sugar reduction ranks third among the ways European consumers choose to eat healthier, and many look to cut artificial sweeteners. Avoiding the latter often means turning to “real” cane sugar, though less of it. In Germany, Glowkitchen’s Double Choc Brownie has less sugar than a conventional brownie and is made with banana and raw cane sugar. With no artificial ingredients or palm oil, it delivers a cleaner, sweet treat.
